    I'd be tempted to leave the chop until the last minute, with all the green off, humidity shouldn't be a massive issue that good extraction can't control, if there's a breeze blowing and temp can be stabilised by the time you get back you'll be ready to jar up.

    As Viz said, get some of these Bovita Packs from ebay or amazon. They are great and keep your himidity in the jars where it should be.. they will be fine while you're away for a few days.

    Chopping last minute would be my solution too... let her dry whilst you are away
