You said after adding half nutes, so you know they have what is needed to grow, let them grow watch the plants, never trust a meter, only use it at a guide,
Kbag has a valid point about calibration! But my well water does see these fluctuations based on water usage in my home and environmental conditions.

    Define young plants
    1-2 weeks
    4-6 weeks.
I keep my ec low when the plants are small and establishing a root system, then once the roots are established, you will see a major change in the plants growth rate, at this time i bump the numbers up as the plant will require the nutrition thru the spurt, to low and you just get slower growth.
Too many people are tempted to overfeed the plant trying to get this growth spurt, but you must wait patiently for it and react when it comes.
Are you doing photos or autos

I have no experience in coco, but to me 7 sounds high.
In Rdwc during veg i try to be about 5.8-6.3 lower in flower.

I know that coco has some unique tendencies, with ph but forget what they are.
