I read somewhere that just putting pollen of one strain onto the female bud of another strain isnt a crossbreed, so how do you go about crossbreeding?

Cross breed is an offspring of plants of two different true/cross breeds (They are crossed). So yes you would still pollinate you female's with male pollen, but your female would be from one cross and the male from another cross.

So if put pollen of say Northern Lights onto the bud of White Widow for example, that would be Northern Lights x White Widow?

Yes mate, it's a cross between the two. But you can go alot deeper into it mate if you wanted to and look back at the strains parents and back cross but you really need to know what your doing.
