Bird’s Custard Pie

I was craving something different to eat and thought why not try a cannabis custard pie. I had a boss who was from the UK that introduced me to Bird’s which I love. It’s hard to find outside of large cities in the US but World Market does carry it.

Makes 1 Pie with 6 Slice Servings: ½ Gram of Cannabis per Slice

Ingredients Needed:

3 Tbsp. Bird’s Custard
3 Tbsp. White Sugar
1 Pint Heavy Cream (Whipping Cream)
1/2 tsp. Vanilla
3 Grams of Cannabis ground
1 Graham Cracker Pie Crust

Garnish is optional you can use fruit, chocolate, whipped cream, or whatever you like. I use sugar coated lemon slices.

Equipment Needed:

• Grinder
• Small Sauce Pan
• Mixing Bowl
• Metal Tea Balls & Chopstick (Optional), or
Fine Mesh strainer
• Wire Wisk, Spoon and/or Spatula

Directions:

Put 3 Tbsp. of custard powder and 3 Tbsp. of sugar in mixing bowl. Add about 3 Tbsp. of the heavy cream to make a smooth paste and set this aside.

Grind cannabis with a small grinder or you can very finely chop it.
• I use two Mesh Tea balls to simmer the cannabis in the cream. You can also let it float loosely in there while cooking but you will need to strain in through very fine mesh to get the bits out prior to putting it in the pie crust. If you opt for the tea balls I recommend a chop stick to stick through the handles and rest the stick on top of the sauce pot so you don’t have a mess trying to fish them out.

Pour the remaining cream in a small sauce pan with the cannabis. Bring to a simmer on Medium Low but do not boil it. Cook at a simmer for about ½ hour.

Either pull out the tea balls or strain the cream and then slowly pour the hot cream into the bowl while using a Wisk to mix the cream into the custard mix. Stir thoroughly and then return the mixture to the sauce pan over medium heat. You need to stir this constantly because you will feel it thicken up very quickly.

Once thickened remove from heat and add 1/2 tsp of Vanilla. Pour into pie crust and put into the refrigerator to set. Once Chilled top with your choice of garnishes.

The pie made this way is not meant to fill up the crust. It is meant to leave room for toppings. If you like a more full pie crust then you could double the recipe for the custard.

So how was it?

• Well with all Canna infused foods I can taste the MJ and this pie is no exception. The custard is not overwhelmed by the MJ though.
• It also has a nice texture. Thicker than when making normal custard which would be 2 Tbsp. v/s. the 3 used for this recipe.
• A ½ gram dose is perfect for me. It puts me right to sleep and I’m happy. You can up it to 1 gram per serving but I really wouldn’t go past that.

I didn't even think about that. Can you buy graham crackers whole or boxes of them ground up?

Probably not easily, except from specialist importers like the one above.

The closest thing is probably 'digestive biscuits', which, when ground up and then bound with butter, make a good base for things like cheesecake, and would probably be a suitable substitute in your pie.

Yes ma'am pretty much any cookie (biscuit) crust could be used. I was feeling lazy so didn't do it. Plus you could use canna butter in the crust and double dose.
