Default Some of the plant is ready, others buds not quite!

What is the rule of thumb for harvesting, do you wait until it is all ready to harvest or can you nip some off while the rest are maturing.

30% of my buds are ready, perfect pistil colour combination.. But the rest are still just white pistils...

I had to chop a middle stem off due to mould unfortunately, but the plant doesn't seem stunned and is in full growth since.

So, yes or no... Wait till it's all ready? Or chop those that are ready off?
Learning the ropes... All comments & feedback are greatly appreciated.
