I have never grown in this small a space but typically target 32-50 led watts per square foot.
So I think you have enough light, but one plant in that space might be better.

I have no experience with these particular lights but 2 should be enough.
Personally I went with an Invisible Sun panel for a box with almost the exact same dimensions, the reason for choosing the light that I did was it's ultra slim profile compared to COB's and a more even spread of the light which also means they can be a bit closer to the plants because they have less of a central hotspot.
But 2 of the cobs that you have should be just fine assuming the temperature won't be an issue. One would work as well but it all depends on your goals and expectations.
As for the number of plants the opinions here obviously vary. In a space that is almost square I personally prefer 1, 4 of even 9 plants with minimal training (tried 9 myself the last round but because of some faulty beans I ended up with just 6 plants and after the summer I'll do another attempt at running 9).
Other numbers of plants work as well but may require a bit more training(of the plants) to fill out the whole space. Training plants (ScrOG or LST) is quite fun as well

2, 50 watt cob led should be perfect for 2.1 sq ft of space. Start them at maximum height and lower if you see any stretch. Dimmable?

Nothing in particular, same conditions as any other Indica, according to Leafly it is an easy plant.
