What exactly is cannabis bonsai? Are the mug grows not bonsai? How about my 2oz soil grow? We choose to take them to flower. (At least the non autos) With proper trimming they could be kept in veg for a long time and kept small.
Any cannabis plant can be revegged. The yield on the reveg is not as good as the original so personally I only reveg if I loved the plant and want to run again as clones using the reveg as the mother.

Google cannabis mother plant. Thats what I'm trying to do. Basically trying to have a mother plant kept very small in a small spot. Requires root trimming and selective trimming. Great thing is it takes very little space

We did a bonsai comp here many moons ago... I'll see if I can dig it out....

I'd say a cannabis bonsai is a plant kept in veg for a long time with the goal of keeping it small rather than do a huge scrog.
What about using a fabric pot, would it then still require root trimming? Or does that depend on how long you want to keep it in the pot? I guess when growing on soil an occasional root pruning would allow you to re-pot it into some fresh soil. Would this be needed in coco?

The root pruning is used to pot back into fresh soil and keep it small and still ticking! Not sure what the requirments in coco would be. Or the use of a fabric pot.

Absolutely, but on the bright side you need to trim those roots anyway
Those spiky airprune pots are probably better in this case, did you know you can actually makes them yourself at a fraction of the cost of the real thing?
Just to give an idea, in execution I would do a few things differently such as not making holes at the top of the pot because water would just runoff out the first row of holes instead of soaking into the soil and I'd make the holes with a bit more attention and as large as the flat ends, perhaps a tiny fraction smaller and probably use a hole punch instead of a drill, much cleaner and likely faster as well.
