checked ec yesterday and it was at 1.2
this morning it is at 1.6
so am I right in thinking they are taking more water than food.
and then I need to feed more water to lower the ec again.

Ohh that looks like pythium bud a root fungus cauze by warm stagnant water . Those roots are always submerged right ? Kind of like a DWC system ?
It clogs the roots and prevent any uptake until the plant keels over and dies .
What temps is that water at ? In those systems 18-19°
Once pythium sets in youll need Lactic Acid Bacteria . Botanicare make it . Called Hydroguard

In the mean time . Either use water bottles to cool your water down . A water chiller . But youll need bacteria to kill the pythium .
