My well water comes out of the ground 1000 parts per million on a 700 scale which makes it about 1.5 EC and the pH is about 7.2. I grew for a couple years before using reverse osmosis water which is what I do these days.
The way that I succeeded growing with hard water is I did three repotts, I would start in a one gallon and as soon as that ran out of nutrients I'd switch to a three gallon and when that ran out of nutrients I'd switch to a five gallon and then I would take it straight into flower. I generally wouldn't feed until I got to about the last three maybe four weeks of flower, because I was simply putting in too many minerals in my water already. That worked pretty well for me as long as I had a good super soil and I used Fox farm ocean Forest for a while, until I found a hydro shop a hundred miles from me that had the soil custom mixed for our particular area. It was absolutely great soil, I really liked it.
I think you could probably grow organically without too much trouble if you did several repotts. Or you could simply avoid using fertilizers altogether.
