personally most of the plants i thin out are thrown into compost. i'm not proud.
i have had my share of plants that i couldn't bring myself to dispose of though. all they did was take up space in the grow room and ruin my yields.
yes you could transfer them outside, that would be my preferred option too! but that comes with the obvious risks that stop me from doing that. if you can do that then you definitely should. even if you don't get a chance to look after them, at least they get a chance

My cupboards 45cm x 80cm and is about the same height as your cabinet. Growing in coco in 8 or 11 litre pots and I struggle to squeeze 2 in at a time and usually find a single plant gives me the same yield anyway. Lots of lst needed in big pots with our height so you'd end up using the whole space.

regarding the amount of plants, i agree with the general comments, wait to see which ones are the strongest and maybe try two, but i expect only one will fit in there nicely. if you have the option of transferring them outside then do that, but your cabinet might end up redundant for the season
once you are more comfortable with growing you should look into scrog and mainlining. i have not tried mainlining myself yet, but IMO one plant scrogged/mainlined in that space would be perfect.
