I put the cola in a sandwich bag before I chop it... I figure it'll help stop mold spores spreading as I remove it.

Damp cellar. I've had to deal with mould more than most. I got the average losses down to 3%. No big deal, plenty of good bud left for me.
As there are mould spores everywhere, I never bothered trying to isolate. I'd be extra vigilant for the last few weeks of flowering and snip out any rot I found, leaving the rest of the cola be. To be extra safe, at harvest do a careful wet trim and bin anything suspect. Even when drying in RH80%, I never had mould post chop.
This is a technique my son developed to identify mould before it can be seen:
In late flower, tap every cola with a fingernail every day. Like checking a wine glass for cracks. If there is some unseen mould in the cola, it will feel different when you tap it. It's something you learn by doing. In the unfortunate event of mould being visible, keep tapping healthy looking parts of that cola and also tap other colas to feel the difference. When there is a suspect cola, dive in like the school nit nurse and snip out the hidden rot. My son has found hidden mould the size of a match head. Best I've managed is the size of a dried pea.
