I have bought a new ph pen and it's still at 4.3. The same nutrient as the other grows doesn't make sense

When did you calibrate your pen last?
Get some ph up.

I'm not really familiar with DWC... but could this be due to her drinking more than expected, or evaporation?

Many factors can influence pH levels in hydroponic systems to change, but the main issue is nutrient and water uptake from the plants. However, decomposing roots release acidic bacteria into the hydroponic solution that can lower pH levels as well. Maybe use root enhancers in your nute schedule.
